It’s been a long time since I posted anything, but since I got back from my summer holidays recently I thought I would  keep the Summer spirit going.

Even though it’s October and cold, but let’s face it Mediterranean food always brings a little sunshine to our lives even with this awful weather.

So I had a little get together this week and made Paella,  in attempt to raise everyone’s spirits and keep the holiday mode for as long as possible.

I love Paella it’s not very time-consuming , it’s great for sharing with friends, it’s healthy and most importantly delicious.

Tortilla de patatas

I just love making this recipe , especially in the summer. I mean lets face it a hot summer in England is rare , so when it comes around the last thing you want to be doing is spending it in the kitchen.

The reason I love this Tortilla de patatas so much is because , after spending most of the summer eating barbecues when the nice weather is out , I get a bit fed up so this makes a nice change and is easy to digest too.

To maximise the taste of it add a nice ice cold drink :).

Here are the steps:

1-  Wash and peel all your vegetables.

2-  Then dice them.

3-  Then fry your diced potatoes.

4-  Meanwhile the potatoes are frying , crack 4 eggs into a clean bowl.

5-  Then add your chopped onion.

6-  To that add the chopped chilli and salt and black pepper.

7-  Then finally add the parsley.

8-  Then mix all the mixture for a good 1 minute.

9-  Leave the mixture for a bit , while you prepare your frying pan to put it in.

10- Make sure the frying pan is on high heat and add a little bit of olive oil to it.

11- Then pour in your mixture along with the potatoes you fried earlier.

12- Leave it for 6 minutes , then flip it over and do the same to the other side , to ensure its well cooked.

Then tada you have a delicious Tortilla de patatas to enjoy !
