Couscous

I couldn’t possibly make this whole blog without including the famous North African dish Couscous in it.

Being North African it’s impossible to a go whole month without it. And I am sure any North African people out there will agree with me.

I remember eating this dish since I was a kid, in my family it’s a tradition until this day that every Sunday the whole family gets together to eat it.

It doesn’t matter if you are living in the North , East , South or West , you have to make the effort to come over , it’s a bit like Christmas dinner , but imagine that happening every single weekend.

I personally love this dish as it’s so delicious, now I know I said I will always make my recipes not time-consuming, but you might find that this one is the exception time wise.

But trust me after you sit down to eat it , you might just make it your Sunday tradition too.

I adore this dessert so creamy and rich in flavour, if you are anything like me and love anything that has cinnamon on it then this is the dessert for you.

The mixture of the vanilla flavour and cinnamon is what really makes this dessert stand out , plus it’s easy to make and for a small amount of money, you can make enough to last a week.

I mean who wouldn’t want to come home after a long day tired , to find this delicious sugar gem hidden in the fridge.

Zabaglione Trifle

This dessert has got to be one of the easiest to make , you can basically do it in 7 minutes no fuss or mess, especially that I had a few friends coming around last weekend .

As I was too busy sorting my other university work out , I completely forgot to make anything so , these trifles really saved the day , and with the size cups I made them everyone was full by the end.

So here is a little video clip to show you how it’s made and hopefully it will save your life , if you end up in a situation like mine.

Penne Rigate and meatballs

Pasta is a dish I could never get bored with , mainly because it comes is so many different styles and shapes and tastes that I still have so much to discover.

When I was younger my favourite was the spaghetti , I would ask my mum to make it every single week for me because I liked it that much.

But as I got older I started liking the Penne Rigate more , mainly because I found it easier to cook than spaghetti. My spaghetti would either come out to under cooked or over cooked.

But with the Penne Rigate I have finally found the balance , so I made a short video showing you how I make it.

Spanish food vs British food – Interview

Hola ! , this week I had the opportunity to interview someone who is familiar with both the Spanish and British food culture.

Her name is Heather Perez ,59 , a teacher ,who is originally British but lives in Madrid.

She has been living in Spain for an amazing 37 years , so if there is anyone that would know a bit about Spanish food , it would definitely be her.

She was attracted to the beautiful country after visiting a friend , and after enjoying her time there she decided to move permanently.

Off course she said the weather ,lively people and culture made her fall  in love even more with it.

Some of her favourite Spanish dishes include , Paella and Tortilla , and her British favourites are Broth , fish without the chips and Mushy peas.

Orange zest Brioche

This is one of those recipes that are super useful if you have a lot of friends and family visiting or university house mates that are feeling hungry.

My version is the large brioche which is enough to feed a family instead of the mini you usually see in the super market, because after all sharing is caring.

And you don’t want to waste your time making small individual ones when you can make a large one , that will taste just as good.

But if you are feeling like you have a lot of time on your hands , then go ahead and make the small version of this.

Now I used Orange zest to make mine, but if it’s not your thing you can replace it with whatever you want.

This version is very similar , to the dessert version:

1- Mix the milk, eggs, the vegetable oil plus the plain flour and the salt.

2- Once the mixture is nice and smooth give it about 10 minutes before using it.

3- Meanwhile prepare your frying pan by adding 2 spoons of vegetable oil and putting it on high heat.

4- To that add your chopped onion and mushroom then a pinch of salt and pepper.

5- Then cook them until the onion is nice and soft and turned a nice caramel colour.

5- Then prepare your  other frying pan for the crepes , personally I like to wipe the pan with butter before I start using it, as it helps the crepes not to stick to it.

6- Then put the pan on medium to high heat for two minutes.

7- Next pour the mixture into the frying pan , making sure to move it around the pan to cover the whole surface.

8- Give it time to cook , lets say about 2 minutes , then flip it over and do the same to the other side.

9- Then sprinkle the cheese while it’s still hot so that it melts inside.

Then voila , bon Appétit 😉

This is one of my all time favourite desserts , if I felt happy , sad , excited or whatever the mood I would make them. I simply can’t go a month without them , just like water is a commodity , les crêpe are mine :).

To start of :

1- Mix the milk, eggs, the vegetable oil plus the plain flour and the salt.

2- Once the mixture is nice and smooth give it about 10 minutes before using it.

3- Meanwhile pre-heat the Nutella , by putting it in  a sauce pan with hot water on low heat for 15 minutes, to make sure it’s nice and flowing.

4- Chop the bananas you are going to use before hand.

5- Then prepare your frying pan , personally I like to wipe the pan with butter before I start using it, as it helps the crepes not to stick to it.

6- Then put the pan on medium to high heat for two minutes.

7- Next pour the mixture into the frying pan , making sure to move it around the pan to cover the whole surface.

8- Give it time to cook , lets say about 2 minutes , then flip it over and do the same to the other side.

9- Then add the toppings and serve.

Then voila , bon Appétit 🙂

Tortilla de patatas

I just love making this recipe , especially in the summer. I mean lets face it a hot summer in England is rare , so when it comes around the last thing you want to be doing is spending it in the kitchen.

The reason I love this Tortilla de patatas so much is because , after spending most of the summer eating barbecues when the nice weather is out , I get a bit fed up so this makes a nice change and is easy to digest too.

To maximise the taste of it add a nice ice cold drink :).

Here are the steps:

1-  Wash and peel all your vegetables.

2-  Then dice them.

3-  Then fry your diced potatoes.

4-  Meanwhile the potatoes are frying , crack 4 eggs into a clean bowl.

5-  Then add your chopped onion.

6-  To that add the chopped chilli and salt and black pepper.

7-  Then finally add the parsley.

8-  Then mix all the mixture for a good 1 minute.

9-  Leave the mixture for a bit , while you prepare your frying pan to put it in.

10- Make sure the frying pan is on high heat and add a little bit of olive oil to it.

11- Then pour in your mixture along with the potatoes you fried earlier.

12- Leave it for 6 minutes , then flip it over and do the same to the other side , to ensure its well cooked.

Then tada you have a delicious Tortilla de patatas to enjoy !

Calzone

This week while I was sitting and watching a programme on the television on cooking , I saw a recipe for an Italian pizza called Calzone , which I think looks a bit like the British version of a Cheese pasty from the appearance of it.

The one I saw had peppers , capers and olives. It looked nice and easy to make and I tought to myself I will have a go at my own version of this , I used slightly different ingredients though.

I thought it will be good to post it on the blog , as it was easy to make and didn’t take long either.

Which is a bonus when you are a student and have revision and other tasks waiting for you like I do.
